Guys. Guys. These noodles are good. I have eaten them probably 5 or 6 times just this week and I’m debating going and making more as I’m writing this because it sounds so good. Edamame is an immature soybean that has a slightly sweet flavor to it. I had never had edamame until a few weeks ago at a local Japanese restaurant. It was my husband’s birthday, so we figured we would go all out and order a three course meal, the appetizer being spicy edamame. It was probably the best thing we ordered that night. It was salty and spicy and slightly sweet all at once. So good.

I’ve had quite a bit of free time lately. Our internet has been out, and between waiting for the internet guy for five hours (who never showed up and we had to reschedule) and my husband working nights, meaning I am here by myself all evening, I’ve had a lot of time to bake. I know it isn’t even near fall yet, but I was so excited about these muffins that I couldn’t wait until then to post it. This is my first recipe is have tinkered with involving coconut flour that have actually been worthy of being posted. Coconut flour is an odd thing, and I don’t think I have it completely figured out yet. First off it smells amazing. Second, it soaks up a lot of liquid. A lot. Even though this recipe only calls for a half cup of coconut flour, it makes 9-10 full sized muffins. So even though a package of coconut flour may seem to cost a lot, it goes a lot further than regular flour. And it is totally worth the expense, for me at least.

I have a couple zucchini plants growing this year. I’ve never tried growing them before, so they are either going to wilt and die because I have no idea what I’m doing, or I will get lucky and have more zucchinis than I know what to do with. These are knotted not rolled, have no icing, and so much easier to make. They look much more impressive and difficult to make than they are. In a little over an hour, you can have freshly baked cinnamon roll knots. It is worth it trust me.

I think I may have a problem with quick bread recipes. Every time I have some brown bananas staring at me and go to make banana bread, the old recipe just isn’t good enough anymore and I have to come up with a newer, better one. Like just today, I was planning on just making a normal, banana bread (recipe here), but as I was reaching for the refined coconut oil (the stuff that doesn’t taste like coconuts), I saw the unrefined coconut oil (the oil that tastes slightly like coconuts) and thought, “COCONUT banana bread!!” and now, after eating three pieces of this honey coconut banana bread, I decided it was definitely a blog worthy recipe.
